how do you make a custom upgrade? for innstance an upgrade that would give footmen permanent immolation?

You don't do a special upgrade to automatically give a unit a ability. You set a ability from the unit (such as defend for footman) and input a requirement for it, which will be like a " dummy " upgrade. Once the dummy upgrade is researched, the ability is unlocked for the unit.
