How do you change the colour of your text on your map.

just put the color code in front of the word here are some examples:
|cffffcc00 - yellow
|cffc3dbff - light blue
|Cffffff00 - Green
|Cffff0000 - Red
|cffff8c00 - orange (i think)
|cff8b00ff - purple or blue
Close with |r
i don't know if your really need to put" |r " at the end of the sentence or word but i do it just to be safe

There's a tool for that on this page, Color Template (am I right, I'm just to lazy to look it up)

There are a lot of tools to fugure out color codes. I would say Colormanager 2 is probably the est, but you can look through all the programs and see which one you like the best.
